“Reimagining Sustainability: Pioneering Upcycled Foods in Circular Food Systems” is a project focused on improving sustainability by finding ways to upcycle foods within the entire food chain. Project work will include conducting consumer preference surveys and testing strategic communication messages in different formats to determine consumer response to upcycled food ideas.
Food waste is an immense issue with many aspects of food creation leaving elements that are edible and can be reused, ,or reimagined, into innovative and tasty food creations.
Led by Dr. Peng Lu, a brand new assistant professor in ALEC, and other ALEC faculty including Dr. Alexa Lamm and Dr. Abigail Borron, the project will bring together partners from the Department of Food Science, the UGA Food Product Innovation & Commercialization Center, the University of Pittsburgh and Drexel University. Exploratory research supported by the Presidential Seed Grant initiative will prime the team for success obtaining additional long-term funding to research in this area of inquiry.
