I’m amazed by how much we’ve been able to see so far. On Saturday and Sunday, we explored Montevideo and got to see the beautiful sights and landmarks. Even when we are driving between locations, I can’t stop staring out the window at all the different buildings and landscapes. On Monday, we got to see Colonia, which is a beautiful little town on the coast with cobblestone streets. In the afternoon, we visited a pasture based dairy farm. As someone who has some background in dairy, it was really interesting to see the differences between their dairy and ours back home. Most of their cows are Jersey/Holstein crosses and are very cute. On Tuesday we visited a slaughter plant and a large beef cattle ranch called Los Tilos. We got to walk through the pastures and assess the quality of the grass. This morning, we went to the INIA research farms and they explained how they breed cattle. The woman in charge explained the science of epigenetics to us. I had heard about this before, but hearing her explain how nutrition can affect the genes of later generations was fascinating. In the afternoon, we got to see a beautiful beef and sheep farm, both in cars and on horseback. The horses were one of my favorite parts of the trip so far since I love them but don’t get to be around them much. I am so thankful for all the experiences and can’t wait to see what the rest of the week has in store.
