On the fourth day of the spring break tour through Georgia, we stopped at M&T farm which is located in the heart of Toombs County. We had the opportunity to tour M&T’s Vidalia onion operation. It was very different than what I had imagined. One of the most interesting facts we learned was that each and every onion is hand planted and harvested, so you can imagine it is a very labor intensive operation. Another interesting fact is that each onion has to be clipped on each end just right to prevent moisture entering and ruining the product. The question was asked how long were they able to store the onions and they informed us that they were able to keep the onions right around a year with CA storage. This was a very interesting stop and we appreciate M&T farms for letting us tour their operation.
